At Copperleaf Chocolat Company we are commited to quality.  As a result we do not use any preservatives.  We use only natural ingredients, which means that you should consume fresh Copperleaf chocolates within two to three weeks. See also the question about how to store your Copperleaf chocolates.

The discoloration you see is called bloom.  It is no indication of chocolate gone bad, nor does it affect the product's taste.  Bloom is caused by the separation of the cocoa butter from the cocoa solids in the chocolate.  This usually is an indication that the chocolate was stored incorrectly or in a place that was too warm or in direct sunshine.

We suggest you store Copperleaf chocolates in a cool, dark, and odor free space.   Optimally, chocolate should be stored between 60 and 64 degrees, though chocolate may be stored at temperatures as high as 74 degrees.  Anything above 75 degrees and there is risk of ruining the chocolates.  We do not recommend storing your chocolates in your refrigerator as this may cause your chocolates to bloom.  However, if you do not have a storage room or pantry at the desired temperature, you may put your chocolates in an airtight sealed plastic bag in the refrigerator, so no odors or moisture can be absorbed by the chocolates.  When you are ready to enjoy your chocolates, make sure you allow them to slowly come back to room temperature for optimal taste.

We create our chocolates in small handmade batches in order to bring you a fresh, flavorful product.  Our chocolates are best when consumed fresh to ensure quality and the best taste.  We believe that freezing does not extend freshness and does not improve flavors and taste.  If you choose to freeze them for any reason, be sure to pack the chocolates in a airtight sealed plastic bag.  This does not allow moisture or odors to reach the chocolates.  When ready, defrost the product slowly by putting the still frozen package in your refrigerator.  When thawed, remove the chocolates from the refrigerator and slowly allow them to come to room temperature before consuming.  Please note that Copperleaf Chocolat Company does not guarantee that a frozen product will have the same color, taste, and quality as the fresh made product.
